WThis is a simplified version of a drink found on our latest drinks list. This is a large-volume pre-mixed which is bursting with the flavours of the holiday season, making it perfect for hosting a festive gathering. Save the extra syrup you can use for morning drinks, sweets, or to mix additional servings of this cocktail.
Bikini Recipe
Serves 10 guests
To make the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
For the Cocktail (makes 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, to finish
Instructions
To prepare the Syrup: Put all the ingredients in a pot, heat until it reaches a gentle boil, agitating to dissolve. Next, remove from the stove and let it to reach room temperature fully. Transfer to a sterilised bottle, close it and store in the fridge, it will last for around a month.
Preparing the Batch Mix: Pour the specified liquid ingredients into one sizeable container, let it rest for one hour, then pass it through , ideally through cheesecloth, making it perfectly clear.
To serve: Measure 85ml of the batch mix into a cocktail shaker filled with ice, and stir lightly for a minute to chill. Pour into a frosted cocktail glass or a similar vessel, decorate with a few cranberries and complete it using a brief mist with the mandarin essence above the glass.
